How to Make the Perfect Corned Beef & Cabbage

This Roasted Corned Beef and Cabbage recipe only requires one pan and ten minutes of prep! While it's roasting, rich flavors comingle and create a juicy, tender dish that will become a family favorite.

St. Patrick's Day is right around the corner, so now is a great time to print your Corned Beef & Cabbage recipe and have it ready to go when you pick up your corned beef brisket on sale at the grocery store.

I've made corned beef in the crockpot, the Instant Pot, and in the oven, and all methods work great, but my family prefers it roasted in the oven with a slightly crunchy crust on the brisket.

To get the crust, I let the corned beef sit uncovered under the broiler for just 2-3 minutes at the end of cooking and that is the trick to a perfect corned beef in my opinion.

Last year I also made a beer-braised corned beef and cabbage in the Instant Pot and my family loved it as well.

Which one should you buy?  Point Cut, Flat-Cut or Round Flat Cut?  The main difference between point-cut and flat corned beef is that point-cut beef has more fat content. Flat-cut corned beef is leaner, which means it has less fat.

Traditional Roasted Corned Beef & Cabbage Recipe

Directions

Preheat oven to 350º.

Remove the roast from the packaging and rinse the brisket under cold water to remove the excess sodium mixture.

Place the corned beef brisket into a medium roasting pan, fat side up.

Spread grain mustard evenly over the top of the brisket and sprinkle contents of seasoning packet over brisket.

Tightly cover roasting pan with aluminum foil and place in the oven for 3 hours.

Meanwhile, chop the cabbage, carrots and potatoes and place into a large bowl.

Drizzle olive oil over vegetables and toss with salt and pepper.

Remove the brisket from the oven and evenly place the carrots and potatoes around the brisket and top with cabbage wedges.

Tightly seal the pan with aluminum foil and return to the oven for an additional 2 hours.

If you want the crunchy top, remove foil and turn on the broiler in the oven to high at the end of cooking.  Broil for just 2-3 minutes before removing from the oven.

Remove the brisket from the pan and loosely tent with aluminum foil. Let rest 15 minutes.

Slice brisket against the grain and serve.

  • 4 lbs. corned beef brisket with seasoning packet
  • 2 Tbs coarse grain mustard
  • 1 head cabbage cut into 8 wedges
  • 3 - 4 medium carrots cut into 1" pieces
  • 6 medium red potatoes cut into 1" wedges
  • 2 Tbs extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
